Bravo! I think you've nicely summed up the reasons Josh & Sam are my OTP. The longing looks and the touches were what hooked me in season 1, but ITSOTG really did me in. It's obvious that the two care very deeply about one another, and it seems to me (and many others) to be something that goes beyond mere friendship.
