While I'm not a shipper, persay, I've always enjoyed the interaction between Spike and Giles. Season 7, especially Lies, just about broke my Giles loving heart. :(

he does it on Thanksgiving; a time celebrating the rescue of the hungry, starving, yet still potentially threatening,
I never thought of that. That's really cool.
Spike helps Fyarl!Giles escape ... able to defend himself from demons,

Standing behind Giles with a wistful, mocking smile is Ethan, standing behind Spike, frowning with disapproval, is Angel
I love how most in Buffy fandom take these two relationships as nearly cannon. It's something about how Joss's characters, I think, because they all really have interesting potential relationships between each other. It's why you can write pairings that have no canononical support, and yet come up with a believable story.
